Pulse: Yellow smoothie with pineapple, lemon, ginger and polenta

This turned out to be more of an off-white smoothie than a pure yellow smoothie, but all of my ingredients were yellow (save for the yogurt)! The polenta was my wild card in this smoothie. I had tried oatmeal in a previous smoothie and it was just a bit chunkier than I wanted. I noticed my yellow log of polenta and thought, “Bingo.”
- 1/2 banana
- 1 thick pineapple ring OR 2 thin pineapple rings
- juice from 1/2 lemon
- 1/2 tablespoon ginger, peeled and finely chopped
- 1/2 cup plain yogurt (I used Greek yogurt)
Yellow may be mellow, but these fruits and veggies are often packed with arotenoids and bioflavonoids. In my research, I learned a little about bromelain, found in pineapples, which is considered to have anti-inflammatory effects. And aside from adding awesome flavor, ginger can help with upset stomachs.
- 1/2 cup orange juice
- a little more than 1/2 inch slice of firm polenta, crumbled (or about 3 tablespoons creamy polenta)
Puree all ingredients in a blender until completely smooth, scraping down the sides if needed. Makes 1 serving.
