For the vinaigrette:
- 1 cup apple cider
- 2 tablespoons honey
- 1/2 tablespoon apple cider vinegar
- 2 tablespoons olive oil
- pinch cayenne pepper
- salt and pepper
Bring the apple cider to a boil in a sauce pot. Boil for about 15-20 minutes or until it has reduced to a little less than 1/4 cup. Remove from the heat and whisk in the honey, vinegar, olive oil, cayenne, salt and pepper.
For the salad:
- 1 medium-large sweet potato, cubed
- 1 apple, cubed
- 1/3 cup pecans
- 2 teaspoons chili powder
- 3/4 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- 1 teaspoon brown sugar
- salt and pepper
- 1 bunch kale, stems removed and torn into bite-sized pieces
- olive oil
- 2 tablespoons shredded Parmesan cheese
- 2 slices bread
- 4 slices cheese (I used a sharp cheddar)
Preheat the oven to 400 degrees.
Bring a medium pot to a boil and add the sweet potato. Cook until just tender. Drain.
Place the kale in a large bowl and add 2 tablespoons olive oil, the Parmesan, salt and pepper. Massage the kale for about 1-2 minutes. Place the kale on a baking sheet lined with parchment paper and set aside.
In a small bowl, combine the chili powder, cinnamon, cayenne, brown sugar, salt and pepper.
Place the sweet potato on another parchment-lined baking sheet. Toss with about half of the spice mixture. Place both the sweet potato and kale in the oven and roast for about 15-18 minutes, tossing the contents of both sheets 1-2 times. Halfway through cooking, add the apples to the sweet potatoes. Add a little more seasoning and toss. Continue roasting.
When the potatoes and apples are ready, both should be a bit golden-brown. The kale should begin to crisp up, but not burn.
While the kale, apples and potatoes are roasting, use the bread and cheese to make a grilled cheese sandwich. Cut into small, crouton-sized pieces.
Toss the kale, apples and potatoes together in a large bowl. Divide between two plates and top with the pecans, grilled cheese croutons and a drizzle of the dressing.
