I visited: Sunshine Sammies, a solar-powered freezer cart offering homemade ice cream sandwiches. Susie is the smiley curly-haired blonde who assembles the sandwiches and parks the cart in spots around downtown Asheville. She said her boyfriend made the cart for her by hand! She sources her ice cream from Ultimate Ice Cream in Asheville, and makes the cookies herself. The best part? Susie takes sammie requests! As in: If you come up with a good ice cream-cookie combo idea, she might put it on her menu!
I tried: The pistachio gelato sandwiched between two Nutella-drizzled sugar cookies.
Why it stood out: The gelato was sweet, the sugar cookies were soft, and Nutella makes everything better always. Perfect portion. Perfect price. A wonderful snack for anyone exploring the streets of Asheville in the summer.
It cost: $4. Susie said she sometimes sells mini-sandwiches for $3 apiece, but all of the full-sized sammies go for $4 each.

Note: Sunshine Sammies opened for business in July and will remain open this year as long as the weather permits. Next year, Susie plans to be open May-October, she said.
