- 1 tablespoon grated orange rind
- 1 tablespoon fresh orange juice
- 1 large egg white
- 2 cups pecan halves
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/2 teaspoon ground chili pepper
- 1/8 teaspoon ground cayenne pepper
- canola oil
- 1/2 cup sweetened dried cranberries
Preheat oven to 225 degrees.
Combine the first three ingredients in a medium bowl, and whisk to combine. Stir in the pecans.
Combine the sugar, salt, chili and cayenne. Add the dry mixture to the pecan mixture; toss well. Spread the nuts in a single layer on a baking sheet coated lightly with canola oil. Bake for 1 hour, stirring occasionally. Remove from the oven; cool completely. Stir in the cranberries.
