- 4 slices good bread
- olive oil
- 1/4 medium-sized red onion, thinly sliced
- 1 clove garlic, minced
- 1 1/2 cups broccoli florets
- salt and pepper
- 3/4 cup shredded sharp cheddar cheese
Heat about 1 tablespoon olive oil in a saute pan. When hot, add the onions and season with salt. Cook over medium-low heat for about 15-20 minutes, or until just caramelized. Just before the onions are done cooking, add the garlic and cook until fragrant, about 1 more minute.
Steam the broccoli over salted water until the florets are bright green, 3-5 minutes. Remove and pat with a paper towel to remove some moisture.
Distribute half of the cheese over two slices of bread. Distribute the onion-garlic mixture over these same two slices, followed by the broccoli. Season the broccoli with pepper then top with the remaining cheese. Cap the sandwiches with the remaining bread and grill in a pan or in a panini maker.
Makes two sandwiches.
