- 3 cups unsalted mixed nuts (I used a combination of almonds, walnuts, peanuts and pecans)
- 3/4 cup candied ginger, minced (Check your baking or candy aisle. I used crystallized ginger chips from the Ginger People)
- 1/4 teaspoon cayenne pepper
- 2 teaspoons coarse salt
- 1/4 teaspoon pepper
- 2 tablespoons sesame seeds
- 1/4 cup sugar
- 1/4 cup water
Preheat over to 350 degrees.
Combine the nuts, ginger, cayenne pepper, salt, pepper and sesame seeds in a large bowl.
In a small saucepan, combine the sugar and water over medium-high heat. Bring the mixture to a boil and cook, stirring occasionally, until the sugar dissolves.
Pour the sugar water over the nut mixture and toss well to combine. Place the mix on a parchment-lined baking sheet in a single layer. Bake until the nuts are golden and fragrant, about 15-20 minutes, stirring occasionally.
Let the nuts cool completely on a wire rack before breaking into pieces. Store in a sealed container in the refrigerator.
Makes about 4 cups nut mix.
