Thyme simple syrup

You can use this recipe to make many kinds of herbal simple syrups. Other types I’d like to try: rosemary, lavender and basil. I already tried mint in this mint juleps recipe. Once you’ve got the simple syrup made, you can add it to all kinds of cocktails. I’ll be sharing one that uses fresh clementine juice this week. UPDATE: Here’s the recipe for bourbon clementhymes.
- 1 cup white sugar
- 1/2 cup water
- 5 large sprigs thyme
Place the sugar, water and thyme in a small saucepan. Cover and bring to a boil. Turn down the heat and let simmer until the sugar has dissolved, 4-5 minutes.
Transfer to a jar and allow to cool. Cover and store in the fridge for up to 1 month.
Makes 1 cup.
