- 1/2 cup virgin coconut oil
- 1/4 cup nut butter (I used natural peanut butter)
- 1/2 cup cocoa powder
- 1/2 cup pure maple syrup OR agave nectar
- 1 tablespoon vanilla extract
- pinch sea salt
- 3/4 cup chopped walnuts (plus more for topping, if desired)
Lightly grease a bread loaf pan with butter or oil. Line with parchment paper and grease the paper. Set aside.
Beat together the coconut oil and nut butter until smooth.
Sift in the cocoa powder and beat until combined. Add the maple syrup, vanilla and pinch of salt; combine until smooth. Fold in the walnuts.
Pour the fudge into the prepared loaf pan. Add the additional walnuts to the top and lightly pat into the fudge.
Freeze, uncovered, for about 1 hour or until solid. Use a sharp knife to cut into squares.
Makes about 24 squares of fudge.
