Oatmeal provides an awesome morning canvas if you wake up feeling creative. I had leftover pumpkin puree in my refrigerator and my wheels just started turning from there.
- 1 cup water
- 1/2 cup rolled oats
- 3 tablespoons pumpkin puree
- 1 teaspoon cinnamon
- pinch ground cloves
- pinch ground ginger
- 1-2 teaspoons honey
- splash of milk
- walnuts and raisins, for topping
Bring the water to a boil in a small pot. Add the oats and lower the heat so the water is at a simmer. Cook until the water is evaporated, about 5-7 minutes.
Remove from the heat and mix in the pumpkin puree, cinnamon cloves and ginger. Transfer to a bowl and drizzle with honey and add a splash of milk. Top with the raisins and walnuts.
Makes 1 serving.
Sounds good, I love anything with pumpkin in it!
