- 1 cup water
- 1 cup sugar
- 3 cinnamon sticks, about 3 inches in length
- 1 habanero pepper
- club soda
To make the simple syrup, bring the water to a boil in a small pan over medium heat. Add the sugar and stir until it dissolves. Turn the heat down to low and add the cinnamon sticks. Simmer uncovered for 15 minutes.
Meanwhile, put on rubber gloves and slice off the top of the habanero pepper. Scrape the seeds out and discard along with the top.
Add the habanero to the liquid and cook for 1 minute. Strain the cinnamon sticks and pepper from the liquid and discard. Allow the syrup to cool at room temperature for a half-hour.
Store the syrup in a sealed bottle for up to 2 weeks.
To make the soda, fill an 8-ounce glass halfway with ice. Add 2 ounces simple syrup and fill the rest of the way with club soda. Stir and serve.
Makes 1 1/2 cups simple syrup, or 6 sodas.
