For the rosemary simple syrup:
- 1 cup sugar
- 1 cup water
- 4 fresh rosemary sprigs
Stir all three ingredients together in a small saucepan over medium-high heat. Bring the mixture to a boil, stirring occasionally, and boil until the sugar is dissolved.
Remove from heat and let stand for 30 minutes. Discard the rosemary sprigs and store in an air-tight container. Let chill for about 4 hours before serving.
Syrup may be stored in the refrigerator for up to 1 month.
makes about 1 1/2 cups.
For the soda:
- 4 ice cubes
- 2 tablespoons rosemary simple syrup
- juice from 1 blood orange
- seltzer water
Place two ice cubes in two rocks-style/short tumbler glasses. Evenly distribute the juice and simple syrup between the two glasses. Fill the remainder of the glass with seltzer water and serve immediately.
