- 1 cup water
- 1 cup sugar
- 24 peppermint leaves
- rose water
- club soda
To make the simple syrup, bring the water to a boil in a small pan over medium heat. Add the sugar and stir until it dissolves. Turn the heat down to low and add the mint leaves. Simmer uncovered for 4 minutes. Strain the mint leaves from the liquid and discard. Allow the syrup to cool at room temperature for a half-hour.
Store the syrup in a sealed bottle or jar for up to 2 weeks.
To make the soda, fill an 8-ounce class halfway with ice. Add 2 ounces simple syrup and 1 teaspoon rose water, then fill the rest of the way with club soda. Stir and serve.
Makes 1 1/2 cups simple syrup, or 6 sodas.
