- 1 salmon filet
- juice from 1 orange
- 1 tablespoon miso paste
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1/2 red onion, chopped
- 1 1/2-2 oranges, sliced
- drizzle of olive oil
- salt and pepper, to taste
- rice, quinoa or another grain for serving
Preheat the oven to 400 degrees.
Whisk together the orange juice, miso, soy sauce, maple syrup, salt and pepper in a bowl.
Place the onion and half the orange slices at the bottom of a glass baking dish and drizzle with olive oil; season with salt and pepper. Place the fish filet on top of onion and cover in the orange-miso mixture. Add the remaining orange slices to the top of the fish.
Bake for about 25-30 minutes (depends on the thickness of the fish), or until the salmon flakes easily with fork.
