Mmm. This is one of my favorite salads of late. Is it just me, or does the dressing kind of soften the kale when the two are tossed together? I also love the variety of textures: leafy kale, crunchy almonds, crisp onions, soft feta, plump farro — so wonderful together.

Rhubarb-almond scones

I made a few easy tweaks to the original recipe, but the basic concept is definitely one I will repeat in the future. I love rhubarb, and it was really great to enjoy it in a non-pie or non-crumble form — no disrespect to those versions, of course. (The rhubarb-ginger compote pictured here is not a necessary addition, but still pretty incredible. Interested in the recipe? Let me know if it would be worth posting!)

Shaved asparagus and avocado salad with mint

I start craving asparagus sometime around March, so lucky for me it’s one of the most abundant (and sometimes one of the ONLY) items at the farmer’s market in early spring. This salad highlights raw asparagus in such a delicate way that you’ll wonder why you ever bothered to steam it whole.

Feta-dill chicken salad in pita pockets

Faithful, long-time blog readers may recall a certain $6 Snack post I wrote that featured hummus from Aladdin’s in Akron, Ohio. Hummus is my favorite appetizer to order whenever I’m home and in the Aladdin’s neighborhood. But the chicken salad pocket is my favorite entree. It has a distinctly Mediterranean taste to it — from what I guess to be feta, lemon and tahini. Toasted almonds are nice touch, too. Here’s my attempt at recreating the chicken salad, and I think it’s a close match.
