Spring ricotta gnocchi

There are lots of Providence restaurants on my to-try list, and Cook & Brown Public House, suggested by a co-worker, is one of them. Chef Nemo Bolin, who hails from the Providence restaurant, created this dish. I’ve modified it slightly, based mainly on the fact that I didn’t have immediate access to morels.

Shaved asparagus tart with lemon ricotta

I’ve always wanted to make something with shaved asparagus because, my goodness, it’s pretty! A recent lazy, sunny Saturday afternoon was the perfect chance to get peeling.┬áNow that I’ve figured out the recipe, I can imagine having this for brunch, serving it for a light lunch or bringing it to potlucks or picnics.

Shaved asparagus and avocado salad with mint

I start craving asparagus sometime around March, so lucky for me it’s one of the most abundant (and sometimes one of the ONLY) items at the farmer’s market in early spring. This salad highlights raw asparagus in such a delicate way that you’ll wonder why you ever bothered to steam it whole.

Asparagus, leek and Gruyere quiche

This was my first quiche and it turned out really quiet fantastic. It was the perfect dish for the Easter brunch we hosted (and paired quiet well with some French toast, potatoes, mimosas and bloody Marys). You know what else this quiche would be perfect for? Mother’s Day!

Curry-butter potatoes and asparagus

I love the idea of adding a few spices to melted butter and pouring it over vegetables. Indian flavors are my weakness right now, but next time, I might try a mixture of cinnamon, nutmeg and ginger over carrots or sweet potatoes.
