Spaghetti squash and avocado salad with chicken

I love a new recipe for spaghetti squash. I’d hate to relegate this awesome winter squash to just getting a bottle of marinara sauce dumped on it. Instead, this guy got a mean, green upgrade.

Chili verde with chicken

This bleak-looking chili has some pretty wild and wonderful flavors, and plenty of protein (so much so that you could easily omit the chicken for a vegetarian version). I loved the warm spiciness of this dish that doesn’t at all overwhelm.

Barbecue pulled chicken sandwich with slaw

These sandwiches were heaven. We were out all day and had plans to make them when we got home, and it was just about all I could think about. They were really quite simple to make, and the chipotle added an extra zip that took it beyond a simple lunchtime sandwich.

Grilled chicken salad with garlic confit

I’m so glad a neighbor gave me two very packed bags of arugula, because it gave me an excuse to make this salad! I also now want to put garlic confit on everything. I’m sort of hoarding the rest of the dressing in my fridge right now.

Feta-dill chicken salad in pita pockets

Faithful, long-time blog readers may recall a certain $6 Snack post I wrote that featured hummus from Aladdin’s in Akron, Ohio. Hummus is my favorite appetizer to order whenever I’m home and in the Aladdin’s neighborhood. But the chicken salad pocket is my favorite entree. It has a distinctly Mediterranean taste to it — from what I guess to be feta, lemon and tahini. Toasted almonds are nice touch, too. Here’s my attempt at recreating the chicken salad, and I think it’s a close match.

Slow-cooker chicken tikka masala

I cut up the chicken and mixed the sauce the night before so I could just toss all the ingredients in the slow-cooker the next morning. What could be better than having lunch (or dinner) ready and waiting? Especially when it makes your apartment smell like the best and coziest Indian restaurant.

Crispy baked wings with buffalo sauce or ginger-soy glaze

Bill made these wings after he and I had been craving them for quite some time — and these were exactly what we wanted. They were crispy on the outside and perfectly moist inside. Bill nailed it. All I had to do was shoot and enjoy.

Chicken salad with green tahini sauce and chickpeas

I made the tahini sauce before I ever considered using it on a chicken salad. I was spattering it occasionally on greens and roasted vegetables before I noticed the jar of sauce sitting next to a container of poached chicken. The best combinations are sometimes right in front of your face. (P.S. – Make this salad the night before and take it to work the next day. It’s best after sitting overnight.)

Grapefruit, avocado and chicken over greens

I made this salad right after my yoga class this past Sunday — so basically I felt like the world’s healthiest human ever. The fatty avocado and protein-rich chicken help pull the bitter greens and sour grapefruit back a few notches, right into the Perfection Zone.
