Chard become one of my favorite greens this summer, and I ate this open-face chard sandwich often. I read somewhere this year that chard would replace kale as the "trendy green" of 2013. That's a ridiculous thing to say, but I do sort of hope that's the case because I'd love to see chard on more restaurant menus.

This is one spicy salad – use less chipotle if you want a smaller kick. But try not to be wimpy.

  • olive oil
  • 1 bunch scallions, sliced thin
  • 1 chipotle chile in adobo sauce, chopped
  • 3 1/2 cups corn
  • 1 1/2 tablespoons lime juice
  • salt and pepper, to taste

Heat the oil in a skillet before adding the scallions, cooking until softened. Add the chile and cook for about 1 minute.

Add the corn, plus a tablespoon of water. Cover and cook until the corn is warned through. Remove the lid and cook until the liquid has evaporated.

Stir in the lime juice and season with salt and pepper.

Makes 4 servings, as a side.
