Edamame hummus

A version of edamame hummus was served at Joel’s company’s holiday party. It was really great with sweet potato and beet chips and thinly sliced baguette toasts, but I really like dipping fresh veggies in my version.

Barbecue pulled chicken sandwich with slaw

These sandwiches were heaven. We were out all day and had plans to make them when we got home, and it was just about all I could think about. They were really quite simple to make, and the chipotle added an extra zip that took it beyond a simple lunchtime sandwich.

I could have eaten this dish for days on end. Sure, hot food in the summer sounds rough, but this dish was really lightened up by the basil, lime and coconut milk. One of my favorite meals this summer.

Roasted mini-eggplant with tahini sauce

Eggplant and tahini are best friends, most notably when blended together to make baba ghanoush. But the miniature eggplants I found at the farmers market were too cute to go into the food processor, so I turned them into three-bite appetizers instead.
