Squash, date and lemon compote

I made this full recipe, cooled it, transferred it to a large jar… and had some of the best breakfasts all week. I’ve added this compote to oatmeal (pictured) and to yogurt. I bet it would be amazing on toast with a little ricotta, or even as a topper for a nice, baked white fish. Why not go there? This could be sweet or savory.

Vegan gingerbread cheesecake bites

I’m a huge fan of cheesecake (the actual, regular kind), but I’d always been curious about vegan cheesecake. I made these little bites for a party, so not only was it a nice, guilt-free item among the less healthy options, but it was something that my friend with a gluten allergy could enjoy as well. As you can see, I also made a pan without the gingerbread spices, but topped with pomegranate arils.

Chewy gingersnaps with crystallized ginger

Those aren’t lumps of coarse sugar dotting the top of these cookies, it’s crystallized ginger pieces!  Those little pieces really helped to elevate these cookies to the next level. These might have a place in my annual Christmas cookie repertoire.

This jelly smelled amazing while it cooked, thanks in particular to the brown sugar, cloves and fresh ginger. But this really wasn't nearly as sweet as it sounds. In fact, I'd say it was 100 percent savory, just like that guide title says.

Compared with my other salads, this was definitely the most tame. Although it wasn't as jazzy as the other salads, I really enjoyed the soft flavors from the spices and the sweet raisins that are all plumped up because they simmer with the rice and spices.

Although it wasn’t as jazzy as the other salads, I really enjoyed the soft flavors from the spices and the sweet raisins that are all plumped up because they simmer with the rice and spices. This salad would be best paired with something else, and I’m considering picking up some salmon to go with my leftovers.
