Hand pies

The tart eggplant and olive filling contrasts really nicely with the almost sweet crust in this recipe. It reminds me of some the lemony spinach pies I’ve had at Greek festivals and restaurants.

There’s something so cozy and sweet about hand pies. Another perk: Hand pies travel well. I made these when my dear friend Kristina came to visit, and we ended up taking them along on a picnic in nearby Floyd, Va.

I made these after Caitlin, Bill and I went to the Evanston Farmer's Market during Caitlin's visit to Chicago. Caitlin mentioned wanting to make a pie, and I'd been eying this recipe from Bon Appetit. The juices get a little sloppy in the oven, but I sort of love that homemade look.
