Blistered shishito peppers with miso and Parmesan

This was my attempt to recapture a dish Bill and I had at The Girl and the Goat last fall, which was maybe one of our favorite meals in Chicago. This is a great, interesting side dish that goes beyond green beans or a salad.

Sesame-miso vinaigrette

This vinaigrette can serve double-duty as a marinade. I added a few tablespoons to some firm, cubed tofu overnight and grilled it (along with some veggies) the next day. I drizzled more vinaigrette over everything and a little brown rice — simple and de-lish.

Miso and sriracha deviled eggs

These might be my favorite deviled eggs of the group. I love the saltiness of the miso and soy sauce complimenting the easy smoothness of the egg white. Definitely something that could make your Easter table a little more exciting.

Miso and maple-glazed roasted vegetables

A simple, flavorful dish that can be served with a salad? On a weeknight? So easy that you can watch multiple animal GIFs while you make it. (And I KNOW you have leftover miso from my recent orange-miso salmon recipe.)

The original recipe called for fennel at the bottom of the pan, but fennel isn’t always my favorite. I loved the fish with the onions (which also picked up the glaze beautifully) and would even suggest adding broccoli as well.
