Cauliflower and red pepper balls over polenta, spinach and caramelized onions

These nonmeatballs are so full of flavor and really relatively quick to whip up. I really love cauliflower and am always happy to learn another way to prepare it. This recipe is getting filed away for later use, for sure. I an even see them being used in a pita (sort of like falafel) or over a salad.

Chicken salad with green tahini sauce and chickpeas

I made the tahini sauce before I ever considered using it on a chicken salad. I was spattering it occasionally on greens and roasted vegetables before I noticed the jar of sauce sitting next to a container of poached chicken. The best combinations are sometimes right in front of your face. (P.S. – Make this salad the night before and take it to work the next day. It’s best after sitting overnight.)

Quinoa and black beans with pomegranate salsa

This dish was the direct result of being forced to stay indoors for about three days straight and NOT wanting to spend those days in a pasta coma. Like much of the rest of the country, Chicago was buried in snow and below-freezing temperatures for a few days this month. With just enough pantry staples and plenty of time to think, I came up with a surprising and very tasty meal.
