Shaved asparagus tart with lemon ricotta

I’ve always wanted to make something with shaved asparagus because, my goodness, it’s pretty! A recent lazy, sunny Saturday afternoon was the perfect chance to get peeling. Now that I’ve figured out the recipe, I can imagine having this for brunch, serving it for a light lunch or bringing it to potlucks or picnics.

Cauliflower and red pepper balls over polenta, spinach and caramelized onions

These nonmeatballs are so full of flavor and really relatively quick to whip up. I really love cauliflower and am always happy to learn another way to prepare it. This recipe is getting filed away for later use, for sure. I an even see them being used in a pita (sort of like falafel) or over a salad.

Grapefruit, avocado and chicken over greens

I made this salad right after my yoga class this past Sunday — so basically I felt like the world’s healthiest human ever. The fatty avocado and protein-rich chicken help pull the bitter greens and sour grapefruit back a few notches, right into the Perfection Zone.
