Red pepper relish over sweet potato and kale

I was so happy to have leftover relish from this meal. I can see it being used over chicken, fish or — if you’re like me — added to a simple cheddar grilled cheese sandwich. I’d like a jar of this relish in my fridge at all times this winter!

Raw chocolate fudge with walnuts

This was my favorite fudge of the batch! Like Caitlin’s peppermint fudge from yesterday, this used a couple of special ingredients to stay a little more fluffy and less dense than fudge made with condensed milk.

Everyone's all about the salted caramel, but bring this salted, boozy butterscotch fudge to the cookie exchange this year and people will rave. It's a nice flavor combination surprise that makes a lot of sense. I suppose the nuts are optional here, but the bourbon is definitely not.

Nutty vanilla-cinnamon granola

Don’t have all the nuts or seeds I mention in the ingredients? Substitute away! But I do highly recommend using lots of seeds and nuts. Do a quick Google search to check out the nutritional facts of your ingredients — you’ll be pleasantly surprised to see that pepitas have lots of iron and how flaxseed is a good source of omega 3. Not a bad way to start the morning!

Crispy kale salad with sweet potatoes, apples and cider vinaigrette

This was a very hearty salad and easily filled me up. I love a little crusty bread with my salads, for grabbing any extras at the bottom of the bowl or plate, so these grilled cheese croutons acted as my built-in sponges this time around. It was pretty, pretty great.

I had intended on just picking up regular chives at the farmer’s market, when a vendor pointed me toward garlic chives — which are fantastic. I love anything garlicky, which fully explains why I dislike close talkers. Or rather, listeners.
