Lemon-ricotta campenelle with toasted walnuts

This pasta is a great make-ahead meal for work lunches. I packed it as a lunch for a week straight: Each day I’d bring one large container of pasta and one small container of extra olive oil for drizzling. I mixed the walnuts in with the large original batch, so they softened over time, but I didn’t really mind it because they maintained lots of toasted flavor. If you prefer your walnuts to have some crunch, pack them separately.

Orange-scented granola

This granola offers just a hint of orange flavor and scent, but it’s just enough. I also add a few orange slices to my bowl for breakfast. It’s winter — go ahead and throw in some extra vitamin C anywhere you possibly can.

Pasta with brown butter beets and orange-sage ricotta

Don’t skimp on the seasoned ricotta! The orange zest and sage really add a fresh bite to the earthy pasta. The walnuts are a must as well, for the crunch factor. This dish is a playful pink for Valentine’s Day — but it also offers some very deep, wonderful flavors and velvety texture. Romance on a plate!

This winter, I’ve been really into my food processor. What vegetable, bean, herb or nut can I grind down to a smooth puree and use as a spread, dip or sauce next? This time it was mushrooms and walnuts with Indian flavors.

Red pepper relish over sweet potato and kale

I was so happy to have leftover relish from this meal. I can see it being used over chicken, fish or — if you’re like me — added to a simple cheddar grilled cheese sandwich. I’d like a jar of this relish in my fridge at all times this winter!

Raw chocolate fudge with walnuts

This was my favorite fudge of the batch! Like Caitlin’s peppermint fudge from yesterday, this used a couple of special ingredients to stay a little more fluffy and less dense than fudge made with condensed milk.
