- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 2 sticks unsalted butter, softened
- 1/2 cup plus 2 tablespoons granulated sugar
- 1/2 cup light brown sugar
- 1 egg yolk
- 3/4 cup REAL maple syrup (no imitations, it just won’t work), divided
- 2 teaspoons cinnamon
Sift the flour and salt in a medium bowl.
In a large bowl, cream the butter, 1/2 cup granulated sugar and brown sugar until creamy. Beat in the egg yolk, followed by 1/2 cup maple syrup. Beat until combined, but do not over-mix.
Add the flour mixture to the wet mixture and beat until just incorporated. Divide the dough into two equal pieces and form each into a disk. Wrap each in plastic and refrigerate for at least 2 hours, or up to 2 days.
Preheat the oven to 325 degrees. Remove one disk to soften before rolling out (only needs about 10-15 minutes, don’t let it get too soft).
Roll out one disk of dough on a lightly floured surface to about 1/4-inch thick. Place the dough onto a piece of parchment paper on a baking sheet. Place in the freezer until firm, about 15 minutes.
Place the chilled, rolled-out dough on the floured surface. Cut out with a leaf-shaped cutter (or whatever shape — I meant to use my squirrel cookie cutter but forgot!). Place on the parchment-covered baking sheet, spaced about 1 inch apart. Roll and cut scraps once. Freeze cookies until firm, about 15 minutes.
Bake the cookies until the edges begin to turn a golden color, about 14-16 minutes. Transfer to a parchment-covered cooling rack and let sit for about 5 minutes.
Combine the 2 tablespoons of sugar and cinnamon in a small bowl. Brush the cookies with the remaining maple syrup and sprinkle with just a little of the cinnamon-sugar mixture.
Repeat with the remaining dough. Store the cookies in an air-tight container for about 1 week, or freeze for about 1 month.
