Fennel and carrot soup

The deep flavors of this soup could almost be mistaken for a bit of bacon fat or another meat product, but it all stems from slowly cooking the vegetables. Even the browned butter walnuts add another layer of depth to this very simple soup. The cream wouldn’t be totally necessary, but it’s certainly a nice touch (especially with that maple syrup).

I made this as a side dish for these gluten-free waffles a few weeks back. They didn’t turn out how I intended, but man did they taste amazing! Such a great, savory side dish for brunch or dinner.

Potato-leek soup with herb oil

I love soups with swirls. This soup features a really nice fresh herb and sauteed shallot oil that can be drizzled on top of each serving, and then twirled into the soup with a toothpick.

Creamy roasted cauliflower soup

This is a grown-up twist on the classic broccoli and cheddar soup: rich, silky, hearty and with a beautiful, mild, fruity depth, thanks to the white wine. Feel free to stir in cooked brown rice or farro, like my mom always did with our broccoli cheese soup.

Pasta with roasted tomatoes, corn and garlic confit

This dish was a straight-up treat. The garlic confit and corn take on a subtle sweetness, while the roasted tomatoes take everything to a deeper level. I would have even skipped the pasta and poured everything over a good piece of bread. So save this recipe as a bruschetta idea as well!
