Simple vegetable curry

This recipe is the result of wanting a very comforting meal without almost any hassle and definitely without having to dirty more than one pot. The result was just that, and was even better when I reheated it for lunch the following day.

Butter-nutty squash soup

Great name, right? It comes from the nutty flavor that tahini adds to the soup. Sure, sesame seeds aren’t nuts, but they have an amazing earthy, nutty flavor that need not be reserved just for hummus.

Delicata squash, carrots and green beans with roasted garlic sauce

It doesn’t really matter what vegetables you roast up for this dish. I went with what looked good at the farmers market and what I thought would look pretty on a plate. I did like the sweet tones of the parsnip, carrots and squash, but it would be easy to incorporate sweet potatoes, beets, swiss chard, broccoli and other seasonal produce. The dressing makes everything sing!

Pasta with roasted tomatoes, corn and garlic confit

This dish was a straight-up treat. The garlic confit and corn take on a subtle sweetness, while the roasted tomatoes take everything to a deeper level. I would have even skipped the pasta and poured everything over a good piece of bread. So save this recipe as a bruschetta idea as well!

Roasted tomato-carrot soup

There are piles of carrots at the farmers market right now, and the tomatoes are starting to look a little softer than a month ago. It’s the perfect excuse to throw these market stragglers into the oven, into a pot and then into your stomach. Tweak the recipe to your liking, maybe add some roasted corn or some leftover rice. Whatever route you take, it’ll be very satisfying and simple.

Simple baked salmon with raspberry-pepper dressed greens

Maybe this is less of a recipe and more of an idea. Every so often life gets a little extra busy and you really want to enjoy something spectacular — without it taking any more of your time. I found this gorgeous bag of greens with edible flowers at the farmer’s market, then we picked up some fresh salmon — and that was that. It was totally satisfying, felt completely indulgent and couldn’t have been simpler.

Beet soup with dill

Sometimes you nearly forget you have beets in the fridge, and that’s pretty much the best time to whip up this soup. It was so simple and didn’t require turning on my oven, just some simple stove-top cooking. Feel free to add a little extra dill if you really love that flavor.
